Daub Hydraulic Dough Divider, Model Type: Robotrad, Purchased New July 2011 this machine can divide both traditional and no-time doughs.

The machine has a manual closed lid and manual operational control panel, the dough chamber is square in construction and the dough is divided into 20 pieces in a weight range of 110grms – 880grms. We have successfully used it for white, brown, rye, spelt etc.

The machine comes with 1 interchangeable grill / plate ( purchased as an additional extra) this can be used for the production of traditional French doughs or Italian Ciabatta doughs, also supplied are 2 square shaped dough or butterpress plates that can be placed on the base of the machine chamber, this will allow for the divider to divide artisan type breads that have benefitted from a long fermentation or proving time ( ciabatta sticks , French baguettes) Once the dough has been divided the lid can be opened manually and with the use of the control panel the main base plate can be raised again to its highest level for the easy extraction of dough pieces.

Bakers Benevolent Ball a huge success

The recent Benevolent ball, hosted in the beautiful surroundings of the Shelbourne Hotel, was thoroughly enjoyed by all who attended.

The event was very well attended and raised significant funds through sponsorship and the well supported raffle afterwords.

Sean Stafford (FCBA President) gave a heartfelt speech on the night and MC for the evening was Ger Cunningham.
